The Food Technology Laboratory was established and developed in order to serve practical activities, research and analysis services for raw materials and products, as well as for the development of new products to improve the quality of graduates through improving the quality of the teaching and learning process.

Microbiology Laboratory

The Food Technology Food Microbiology Laboratory at the University of Muhammadiyah Malang (UMM) is a laboratory that functions for activities closely related to microbiology. Located on the 1st Floor of the Kuliah Bersama 1 Building (GKB 1) and is still in the same location as the Lab. Food Analysis. This room has an area of 100 square meters with a capacity of approximately 20-30 people. Administratively, the Food Analysis Laboratory is under the auspices of the Food Technology Study Program (Prodi) of the Faculty of Agriculture and Animal Husbandry (FPP). This laboratory is also intended for the activities of undergraduate students from several study programs at FPP UMM. This laboratory is equipped with several tools used for practical and research activities, including laminar air flow, colony counter, vortex, incubator, autoclave, water bath and tables and chairs. This room is also equipped with a blower which will condition the air to circulate properly and a CCTV camera which will monitor all activities and security. This room is also always kept in a sterile condition so that the partitions between the rooms use glass for easy cleaning.


Chemistry and Food Analysis Laboratory

The Food Technology Chemistry and Analysis Laboratory at the University of Muhammadiyah Malang (UMM) is one of the laboratories that supports various practicum activities for undergraduate students from several Study Programs (Prodi) at the Faculty of Agriculture and Animal Husbandry (FPP). Administratively, the Food Analysis Laboratory is under the auspices of the UMM FPP Food Technology Study Program. This laboratory is located on the 1st Floor of the Joint Lecture Building 1 (GKB 1). To support student activities, there are 3 rows of tables and chairs intended for students who are doing practicum or research. This room has an area of approximately 200 square meters and has a capacity of approximately 50 people. There are several tools to support activities such as freezers, ovens, condensers, fume hoods, analytical scales, desiccators, spectrophotometers and whiteboards which are used for practical activities. This room is also equipped with a blower to maximize air circulation and a CCTV camera that will monitor security and all activities taking place in the laboratory.


Food Engineering Laboratory

The Food Engineering Laboratory is one of the laboratories in the Food Technology Department, Faculty of Agriculture-Animal Science, University of Muhammadiyah Malang. The function of the Food Engineering Laboratory is a place to develop food innovations based on food science related to the physical and chemical properties of products. Food Engineering Laboratory as a forum for implementing post-harvest technology for agricultural, livestock and fishery products. This laboratory is equipped with facilities and infrastructure to develop processing and handling technology for food commodities.

The Food Engineering Laboratory carries out food processing activities aimed at various kinds of quality food products, for example rice analogues, functional noodles from local flour and starch, antioxidant-rich fruit juices, gluten-free cakes, low-calorie nuts, aloe vera syrup, instant aloe vera, instant ginger, instant turmeric, yogurt, soy milk, various kinds of chips from fruit and tubers, as well as exploring various compounds found in food to be used as natural BTM such as carrageenan from seaweed, chitin chitosan from shrimp and shellfish, natural dyes from canna flowers, roses, roselle flowers, turi flowers, gladiolus flowers. To support all these activities, this laboratory requires several equipment, including: extruder, steamer equipped with a timer, polisher, mixer for flour, vacuum frying, dryer cabinet, hydraulic press, spray drayer, oven, vacuum sealer, freezer, gas stove, proofer and other tools.

UMM Bakery

UMM Bakery is one of the business units of the University of Muhammadiyah Malang with funding support from the Ministry of Research and Technology of the Republic of Indonesia through the Science and Technology scheme for Campus Innovation and Creativity (Ipteks bagi Inovasi dan Kreativitas Kampus/IbIKK). UMM bakery was initiated by a team of lecturers from the Food Technology Department, Agribusiness Study Program, UMM Faculty of Agriculture-Animal Science and Management Lecturers from the UMM Faculty of Economics and Business. Team Leader Prof. Dr. Ir. Damat, MP. Other team members are Dr. Ir. Anas Tain, MM, Prof. Dr. Ir. Elfi Anis Saati, Rahmad Pulung Sudibyo, SP., MP., and Dr. Rahmad Wijaya, SE, MM. UMM Bakery was established, not only as a business orientation, but also as a learning medium for food technology students. The existence of UMM Bakery will provide additional facilities for students to practice directly how to make bread properly and correctly.

UMM Bakery is located at Jl. Notojoyo No.17, Babatan, Tegalgondo, Kec. Karang Ploso, Malang, East Java 65152. UMM Bakery is equipped with several adequate equipment, including scales, mixers, proofers, work tables, freezers and ovens. UMM Bakery also applies a hygine and sterile system in every step of making bread. There are several rooms in the UMM Bakery Unit, namely raw material storage room, raw material weighing and mixing room, printing room, proofing and oven room, product display room, secretariat room and toilet. Starting from 2018, bread products from UMM Bakery have had a halal certificate from LPOM MUI East Java.
